Explanation of Sino-German Chef Labor Cooperation Examination

The Sino-German Chef Labor Cooperation Examination is based on the "Sino-German Chef Labor Cooperation Agreement" signed by the China Foreign Contractors Chamber of Commerce (hereinafter referred to as the "Contractors Chamber") and the Foreign Labor Employment Center of the German Labor Bureau (hereinafter referred to as the "German Foreign Labor Employment Center") Relevant regulations

 

1.Purpose of Examination
The Sino-German Chef Labor Cooperation Examination is based on the "Sino-German Chef Labor Cooperation Agreement" signed by the China Foreign Contractors Chamber of Commerce (hereinafter referred to as the "Contractors Chamber") and the Foreign Labor Employment Center of the German Labor Bureau (hereinafter referred to as the "German Foreign Labor Employment Center") According to the relevant regulations, the professional quality and cooking skills of professionals who go to German Chinese restaurants to work as chefs are assessed. The examination results are one of the necessary materials for chefs to apply for a visa to Germany.
2.Examination institutions
The Sino-German Chef Labor Service Cooperation Examination is held by the Sino-German Chef Labor Service Cooperation Examination Center (hereinafter referred to as the "Examination Center") jointly recognized by the Contractors Association and the German Foreign Labor Service Center. The examination centers are located in Beijing, Shanghai and Guangzhou, and are undertaken by Beijing Fengtai District Vocational Education Center School, China Vocational School and Guangzhou Tourism and Business Vocational School respectively.
3.Exam Content
The Sino-German Chef Labor Cooperation Examination includes two parts: Health Knowledge (European Standard) Training Examination and Cooking Skills Examination (see Annex1). The health knowledge examination adopts the open-book examination method, and the cooking skill examination adopts the on-site actual operation judge evaluation method. Those who pass the examination shall be issued by the examination center with a certificate of passing the examination of cooking skills (English: 《Certificate of Chinese Cuisine Cooking Test) and health knowledge examination certificate (English: "Certificate ofHygiene Course"). The certificate is valid for two years.
(I)Health knowledge training examination
1,Training materials Adopting the Syllabus for Health Knowledge Training prepared by Guangzhou Tourism Business Vocational School (see Annex2) and "Health Knowledge Training Materials" (belowcalled "teaching material"). Training time4 hours of school.
2、Test content and score setting The content of the health knowledge examination focuses on the second chapter of the textbook, and adopts the open-book examination of paper papers. There are 150 questions in total, including 100 true and false questions and multiple choice questions.50 way. Exam Total Score150 points, 130 points are passed (see annex3). Examination time90 minutes, half an hour before handing in. If you fail the first health knowledge examination, you can give a chance to make up the examination (usually on the third day).
(II)Cooking skills assessment
1,Assessment content and score setting Cooking skills include raw material forming and hot dish making. Raw material forming key assessment knife workers. Hot dishes are made on the spot, of which one must be tested and two selected dishes are made. The three dishes should reflect different cooking techniques. Total score of cooking skill assessment100 points, 60 points are qualified, the general pass rate is not higher than 95% (see annex 4, 5).
2、Assessment requirements Chefs can bring their own knives and chef's clothes, and they can also use the relevant materials and tools such as chef's clothes provided by the school free of charge. They are not allowed to enter the examination room without wearing chef's clothes. All raw materials for cooking skills examination shall be uniformly prepared by each examination site.
3、Assessment and evaluation The invigilation and evaluation of the culinary skill assessment are undertaken by the culinary skill assessment team. The review team is randomly selected from the reviewer library.Consists of 3 or more members, who shallHave the qualification of Chinese cook appraiser approved by the vocational skill appraisal center of the Ministry of human resources and social security.
4.Examination time and cost
The number of monthly or reserved persons for the Sino-German Chef Labor Cooperation Examination exceedsOne session will be held for 15 people, each lasting 2 days. The operating company with the qualification of Sino-German chef labor service cooperation will choose to make an appointment for the examination through the network management system according to the principle of the nearest examinee. The examination center will publish the examination notice on its website in advance.

Candidates with identity cards,2 passport photos with white background to take the exam. The examination fee of RMB 1650 yuan shall be collected directly from the chef by the examination center and a valid certificate shall be issued.
